Chorizo Hash


When all you want to eat is a plate full of comforting, magnificent vegetables all you need to do is make hash.  Oh how tasty hash is!  Bunch of fresh veggies tossed together to make a lovely plate of delicious, crisp, bright flavors.  This recipe takes it up a notch with the addition of vegetarian chorizo.  The spicy chorizo (Mexican chorizo is spicy) is a great complement to the veggies’ sweetness.  This dish is a little bit sweet a little bit spicy and a whole lot flavorful.  Add an egg on top and breakfast/lunch/dinner is served.  Nuff said!


– 1 potato, chopped;

– ½ onion, chopped;

-1 bell pepper, diced;

– 4 cups of mushrooms (10-12 mushrooms);

-2 cloves of garlic, crushed or finely chopped;

-10 oz. package of vegetarian or vegan chorizo;




-4 eggs or egg substitute.


Heat oil in a large sauté pan over medium heat.  Sauté potato for about 15 minutes (potato will not be fully cooked but that is okay).  Salt potatoes.  Add onion, peppers and mushrooms to the pan.  Sauté for another 5 minutes.

Next, toss in garlic, more salt and pepper.  Finally add chorizo and cook until heated through and potatoes are tender.  In a separate pan cook eggs as desired (over-hard, over-easy, scramble, whatever tastes great).  Place hash on a plate and place eggs on top.  Nom. Nom.

  1. I served this with eggs, tortillas, diced tomatoes, and sour cream, it was very tasty. I’d triple the potato if I were having this by itself, or serving a rich eggs benedict on top (go vegan or go big I’m thinking)
    This was my fist time with vegetarian chorizo and also pairing chorizo with mushrooms, they were both a hit, so I’ve bookmarked a chorizo stuffed mushroom recipe to try later. Thanks!
